  • El Torito

I highly recommend the sizzling fajitas salad. I tell them to hold the tortilla strips (really easy since they make it in front of you) and to use the cilantro pepita dressing (comes with a vinagrette but I prefer cilantro pepita). I never tried it with chicken but the steak is to die for! It has yummy cojita cheese, mixed greens, dressing, pepitas (if you're not on nut rung, I'd hold the pepitas), and steak. It isn't a whimpy salad either, it's HUGE and very filling! Lots of steak! I usually save the leftovers for tomorrows lunch.

    Best salad ever!

I've never been to El Torito, but I make their cilantro pepita dressing all the time and it's fabulous. It's so good that I could eat it by the spoonful. Here's the recipe:

It's very easy to make and lasts a long time in the fridge. I serve it over taco or fajita salad in place of guacamole and sour cream. I use parmesan cheese (freshly grated, not the Kraft stuff) instead of the Cotija cheese and it works just fine.
