  • Sushi

Hello...I am starting week 2 in induction and have already lost 8 lbs Tonight I am going to eat one of my favorite foods--Japanese--and I already know I have to order sashimi. I was also going to order their mussels, which are baked with cheese and mayonaise, as well as have a cucumber salad with no dresssing ( I think it has sugar). Do these sound ok?

I have been eating something called a "KC Roll" or "Sunny Delight". Its Tuna, Asparagus, and Cream Cheese wrapped in cucumber. Its like candy, and beside the carbs in the cukes, its virtually free.

I love sushi and was devistated to know that I'd pretty much have to turn it into a very, very rare special treat if I'm sticking to low carb. But then I discovered rice-less sushi!! Almost any sushi chef will be happy to make it special for you, just tell them you can't have rice. They add all the usual fillings, wrap in a sea weed wrap & you've got low carb sushi!

Do all sushi restaurants make KC rolls and sunny delight rolls?

Usually they are found in all sushi restaurants in SF Jaybee. They are my favorites.

                    Re: Sushi

Yesterday I went into a sushi restaurant and asked if I could have riceless sushi...they looked at me like I had 3 heads! They said the seaweed wrap would rip so it would be very difficult. Could you tell how your LC rolls are made then perhaps I can make them myself...

                      Re: Sushi

                      Tuna rolls and Tuna Don

                      Faux rice:
                      1 small-med sized cauliflower.
Grate, with food processor or a grater. After grating i got about 240grams.
Vinegar - about 2-3tbs (make sure its just regular vinegar, and not the vinegar for sushi as they often add sugar to it)
                      Granular Splenda- 1tsp

Add some water to your pan and fry the "rice" until soft, but not mushy.
Place cooked "rice" in a big wide bowl or plate. With a hand fan or something similar, (i used one of my plastic lids to a ziplock sandwich container) fan the "rice" for about 5mins. Add the vinegar and splenda a little at a time, and continue to fan. Keep doing this until the "rice" has cooled completely.

                      Filling and Dried Seaweed:

This is really up to you. I used tuna and avocado and mayo.
Use rectangular shaped nori (dried seaweed), and size depends on how big you want them.

Place nori on dry surface, and add a layer of "rice". Place whatever fillers you like, and roll them up as tightly as possible. Cut rolls into desired thickness.
(i made 3 long rolls; 1 tuna roll, 1 tuna and avocado roll, and 1 tuna avocado and mayo roll. They cut up to 5 pieces each)

The faux rice does not hold as well as traditional Japanese "sticky" rice, and it got a little crumbly, but if you're gentle when cutting, it works out well. You can also add a bit of mayo to the "rice" to help it stick

I tried to make some yesterday but ummm....didn't quite work out and the seaweed wrap wasn't moist because it had no rice to steam it up...I will try this recipe today..Thanks again!

Hate to burst everyone's bubble, but seaweed isn't allowed on induction (it isn't on the acceptable foods list).
