  • anyone know about peruvian food?

    my boyfriend is peruvian and we go to a chicken place quite often. there is a sauce there that is made from cheese which is called guancaina and there is also a green hot sauce. I have no idea what goes in these sauces exactly, if anyone knows please enlighten me.

    Hi!

    You posted this a while back but hopefully you still read the boards. I'm peruvian and I can tell you that the huancaina sauce is HIGH carbs... It's main ingredient is crushed saltine crackers. As for the green chile sauce (aji verde) that's just crushed hot pepper and a little bit should be okay. The chicken is great it's just rotisserie style, and if you like seafood go for the ceviche.       If you are going peruvian I would go with the pollo ala bras

      If you are going peruvian I would go with the pollo ala brasa ... I dont know what these peruvians do to these poor chickens but it comes out awesome!!!

      Also I would think the ceviche would be OK
      Anticuchos, cuys ( did you notice http://www.cuy.net/store ??? )
      The jallea is awesome but sometimes comes overly breaded

        thanx for all your help guys, i had no idea the yellow sauce was high in carbs i'll stay clear of that. as for the green sauce i can only handle a little because it's really hot. I love the rotisserie chicken, with a side of salad. the anticuchos I was told is the heart of i dotn recall what animal so i dotn know about that =) thanx again for your help =)

          Anticuchos are delicious but they are made from cow heart. Does that have carbs? I have heard that some organ meats may have carbs but I'm not sure about cow heart. As for cuy... that's a roasted ginea pig. :boom I know many people who love it but I myself haven't been able to eat it. In my mother's hometown they are quite popular but they are served whole and look like roasted rats on a plate :vomit

          Peruvian food is yummy overall and at first i thought I'd be giving up lots but with pollo a la brasa (rotisserie chicken) and ceviche I'm more than okay.

            The heart does not have carbs.

            The anticuchos do not have carbs.

            Should be OK. Is the green sauce you are talking about rocotto?
            That stuff is hot. You are not talking about the green / yellow sauce for the top of papa ala juan caina ( sp ? ) that probably has carbs if you are.
            Rocotto should be OK but again is really really hot.

            Anyway the first time I was in Peru I had Anticucho and I loved them. I ate them every day. They were my favorite food. Then I found out what they were .... heh took me a bit to overcome that thought.


            Cuy is not bad ... again a little getting used to but it is kind of like rabbit. Pretty gamy ... I was pretty shocked to see them in the NJ / NY area ... but in peru and ecuador you can find them all over the place.

            Peruvian ceviche ( ceviche mixto ) is in my opinion the best ceviche.

              Thanks for the carb count on the anticuchos! The huancaina sauce ingredients are: cheese, evaporated milk, oil, yellow hot pepper and lots of saltine crackers. Yum... but not for atkins.

              The green and orange (aji) pepper sauces are VERY hot (and very low carbs) and are generally only used sparingly.

              Tom are you close to Paterson? I hear there's a large peruvian community there.
