    This is my sister's recipe, adjusted for this WOE...

    1 head of broccoli (break the florets into tiny pieces... you don't really
    use the stalk, but I guess you could if you want)
    1/2 c. Splenda
    1 cup mayo
    1 small purple onion
    2 c. mozzarella cheese
    1 tbsp. vinegar

    Like I said before, break the florets up into tiny pieces, mix in a bowl with the chopped onion and the cheese. To make the dressing, mix together the mayo, splenda and the vinegar. You don't want to mix this with the salad until just before you serve it. I guess the vinegar breaks down the mayo and makes it liquidy... So, add no more than 30 minutes prior to serving. I made it for my last command function and my critical Navy friends had no idea that this was an Atkins recipe... :laughing
