    This recipe came off of an email list and I forget now who submitted it. It is fantastic however so I will share it too. This tastes really good and is a unbelievable substitue for mashed potatoes. You'll think you are cheating!

    Cut up 4 cups of raw cauliflower into smallish pieces.
    Boil approximately 5 minutes until it gets soft.
    Drain Cauliflower well.
    Put in blender or food processor with 2 tbsp cream cheese, 2 tbsp butter, and 2 tbsp sour cream.
    Blend until the consistency of mashed potatoes. Add salt and pepper to taste.

    I do that but then i add some heavy cream, cheddar cheese and a few ounces of cream cheese and a couple of scoops of sour cream and bacon bits if they are handy and make what my husband and i call Orgasmic Potatoes (wannabe potatoesLOL) throw everything together and put it in the oven til everything is melted and you can stir it together. yum!

      I made mine like I made mashed potatoes. It was good in it's own right but I wouldn't put gravy on it. I did add some cheddar. I think I would like it with the cream cheese in it.

        Cream Cheese and sour cream

        I don't like either cream cheese or sour cream alone but i do know in some recipes they don't taste.Is that so in this one.I really need a alternitive to Potatos and pastas

          LOL, Jimmya! Not like cream cheese? ;-) hey, everyone has their thing. I love the stuff. Anyway, I would give these a shot. I don't think that they taste much like the cream variety you put in. I think it more or less dilutes the cauliflower taste instead. Give it a shot and see what ya think.

            Cream Cheese

            Well I'm thinking on giving it a shot now I have to git my wife to do it. She likes cream cheese but she also likes real potatoes we'll see and then you'll hear.Thank You for your reply.PS I'm not big on any Cheese our sour cream but who knows

                Made these tonight for both Atkins and non-Atkins people and they were a HIT with everyone. Only thing is that I could not make mine smooth like potatoes.

                DUH!!! (((smacking self upside head))) I used a hand mixer! Maybe THAT'S why the recipe says use a blender!!! Boy, do I feel stupid!

                Well, in any case, they still tasted good, they were just lumpy. I added the cheddar and bacon bits like someone suggested. Yum-my!
