  • Broccoli Spinach Casserole

    10 ounces frozen chopped broccoli
    10 ounces frozen chopped spinach
    8 ounces cream cheese
    2 tablespoons butter
    salt and pepper, to taste

    Preheat oven to 350. Cook the vegetables as directed. Drain well. Blend in cream cheese and melted butter. Add salt and pepper.

    Spread in casserole dish. (treated with butter or Pam)

    Bake at 350 for 30 minutes.

    Makes 6 servings.
    Carbs 5 per serving
    Fiber 3 per serving
    NET Carbs: 2 per serving

    Tried this last night. Nuked the veggies til hot, added only half the chesse and half the butter, nuked til the butter melted and stirred it all together. I took a couple of minutes and is fit to serve a king. Yum...Kim, if your still with us, this is a keeper......
