Spinach Salad (needed a switch from lettuce)

Spinach Salad

Spinach (I prefer the baby spinach)...2 or 3 cups
1 hard boiled egg....diced
2 mushrooms diced
onion (if you like)
Dressing:
1/2 c mayo
1/4 c splenda ( I have cut it down to about 1/
1 T vinegar
Thin out mixture with a about a Tablespoon of heavy cream

The dressing is good for about 4-6 salads.
