I just threw this together the other night and it was delicious. My husband asked me to make it again tonite, but I didn't have any zucchini left over.
Slice up some zucchini (I used 4 really young, small ones)
1/4 cup (I eyeballed it) whipping cream
2 tablespoons sour cream
1 egg
1/4 cup parmesan cheese
salt and pepper to taste
whip together the cream, sour cream, egg with a fork until the egg is completely stirred in. Sprinkle the parmesan over the zucchini and pour the mixture over the top. Cover with aluminum foil and bake at 350 degrees until the squash is tender. Top with two slices cheddar cheese (or shredded cheese) and bake again until the cheese melts.
You could use any type of vegetable I suppose
