    I found this recipe on allrecipes.com and made it for dinner tonight. What a treat, they are REALLY fantastic. Only 2g net carbs per mushroom. And they're induction friendly! Also, it did NOT take me 25 minutes of prep time as estimated, 10 tops. Recipe on Allrecipes.com

    Mouth-Watering Stuffed Mushrooms

    Yields: 12 servings
    "You won't find breadcrumbs in these unique mushroom caps--here, a cream cheese and parmesan based filling will get you stuffed."

    INGREDIENTS:
    12 whole fresh mushrooms
    1 tablespoon vegetable oil
    1 tablespoon minced garlic
    1 (8 ounce) package cream cheese, softened
    1/4 cup grated Parmesan cheese
    1/4 teaspoon ground black pepper
    1/4 teaspoon onion powder
    1/4 teaspoon ground cayenne pepper

    DIRECTIONS:
    1. Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray. Clean mushrooms with a damp paper towel. Carefully break off stems. Chop stems extremely fine, discarding tough end of stems.
    2. Heat oil in a large skillet over medium heat. Add garlic and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic. Set aside to cool.
    3. When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared cookie sheet.
    4. Bake for 20 minutes in the preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps.

      A few things I'd like to add: Use LARGE mushrooms (or more medium ones than called for), otherwise you'll have a lot of leftover stuffing.

      I cooked them a bit longer than the recipe calls for, they just didn't seem done after 20 minutes at 350. I gave them 5 more minutes at 400 and they were great, bubbly and ready.

      Some recommendations for variation: Add bacon. Sautee a little onion with the mushroom caps and garlic, instead of the onion powder. Add some crab meat. I sprinkled the tops of mine with shredded parmesan for tha last 5 minutes, which gave them a nice crunchy, cheesy topping, and made them look a little bit nicer. Top with chives. If you like more kick, increase the cayenne.

        This does look good. Another fave of stuff mushrooms is..I use blue cheese melt it with butter..fill the caps and broil until brown...yum!

          Another version is cook slightly in butter, fill with blue cheese and BACON. Then broil.

              Mushrooms are my favorite veggie! I am definitely going to have to try these recipes out!

              Another good one is to coat raw mushrooms in parm cheese and fry....I love fried mushrooms as an occasional treat!

                Just a note about great recipes like this, make them for parties. You won't find out until after you make them that you might be the only one who likes them and it's hard to throw them away.. lol

                  I made these last night (w/ a little tweaking) and they were YUMMYYYY!! The kids even liked them!

                    I made these tonight for my very first day on Atkins and they were wonderful. The only thing is that I wanted to eat more than I should have! YUMMY. My husband didn't like the garlic taste, but I sure did.
