  • Mock Cinnamon Apples - Jicama

    Recipe by my friend Luna.


    Ingredients:
    1 jicama
    1 diet cream soda
    2-3 Tbsp butter
    2 Tbsp cinnamon
    1 pkt diet apple cider mix (I use sugar free Alpine brand)
    juice from 1/2 lemon
    1 cup water
    pinch salt


    How to Prepare:

    Peel jicama and slice into bite-sized pieces. Melt butter in skillet and add jicama slices and diet cream soda, cinamon, lemon juice, and pinch of salt. Stir and let this cook down over low heat until most of moisture is evaporated. Add water and cook down again until thick. The jicama will not get as tender as apples, but you cannot tell difference in taste. You could use this as a side dish for a country-style meal, top with a sweetened crushed nut mixture and bake for a dessert, or serve with lc ice cream or pancakes. If using a medium jicama that makes about 3 cups when sliced, the whole recipe will be 24g carbs total. (51g carbs - 27g fiber)

      It kinda reminds me of the Mock Apple Pie recipe made with Ritz crackers!
      (Remind me to throw that recipe out!)

        Is this good for induction?
        And where do you find "diet apple cider mix ", I have never heard of that.
        I bought a Jimaca today, and my kids laughed and laughed at how ugly it is.
        I am curious to use it. I thought I would try the french fries, but want to check if it's something I can have on induction.

          jicama is 100% induction legal

          And I found the Sugar Free Apple Cider mix with the hot cocoa at the grocery store

              what the heck is a jicama?

              this recipe sounds great. Only, what's a Jicama?

                I went to the grocery store to get the ingredients to make this recipe. I noticed that the Alpine SF cider has nutrasweet(aspartame). Should I be worried about this, or do you think that I am being to anal?

                  You have to decide that for you.

                  Personally? I didn't discover this recipe until after I was done with induction.

                  Technically, the aspartame isn't allowed, and I generally advocate for doing a completely clean induction.

                  On the other hand, you're talking about one serving of cider that will be divided between 4-6 servings of jicama. <shrug>

                    I love Jicama. I was so afraid to try it but after I did. :P I am going to try this recipe. Now off to the store to find the stuff I need.

                      I made this the other night. I had to use rootbeer instead of the cream soda. Can anyone help me out in finding some Splenda sweetened cream soda? I have tried to be a super sleuth, but no such luck.

                      P.S. I put a dallop on whipped cream on it, and it was great!

                          I only used butter, cinnamon, and Splenda and it was really good. It had a crunch to it, but very tastey.

                              I bought the stuff today...I'll probably make it tomorrow! Yummers. I've never had jicama before so I bought 2 in case I like them. At .69 each can't go wrong.
