  • Paula's Cucumber Salad

    Watching Paula Dean on Food Network is like watching carbohydrate porn; however, today she made a good looking cucumber salad that I tried and loved.

    2 cucumbers
    1 teaspoon kosher salt
    1 teaspoon white vinegar
    1/2 cup mayonnaise
    1/4 cup sour cream
    1 tablespoon chopped fresh dill
    Freshly ground black pepper

    Peel and slice the cucumbers and put them in a glass bowl. Sprinkle them with salt and vinegar. Cover and let stand for 30 minutes. Pour off the excess liquid and drain in colander for about 30 minutes to allow complete drainage. Add the mayonnaise, sour cream, dill and pepper, and mix well. Cover and refrigerate until serving time.

    I put this into Fitday and for one cup of cucumbers (instead of 2, I'm not sure how much that would be) it is a total of 12 carbs.

    i absolutely adore paula deen (but i don't necessarily want her figure). she also has a recipe for crab stuffed shrimp wrapped in bacon that i don't believe had any sort of illegal ingredients (if you didn't make the sauce that comes with them). i made them several months ago (with the sauce and rice, etc.) and they were fabulous.

        This just sounds so cool and crisp and refreshing..I know I'll have to make it soon because I'll be thinking about.

          Alright, I made this recipe again tonight, and I have to say: THIS IS THE KEY TO LIFE. I started draining the cucumbers before I worked out and mixed it up afterwards and I pretty much had to have my roommate restrain me from eating it all. I even threw in a couple tomatos and that made it truly incredible. I may start using the dressing on salads, too. MMM MMMM.

            This is exactly how I make tuna salad except I use lemon juice instead of vinegar.
