I used to love twice baked potatos, but cant have them now...so my mom and I thought up this recipe and it was sooo good!
Bare with me, you will have to excuse the non-specifics!
Yellow Squash- 1 per person
Slice in half lengthwise
Bake at 350 for 15 minutes to soften it up
Let the squash cool then scoop out the insides being careful not to damage the skins.
Take the insides and put in a bowl, mix it with diced red onion, crumpled bacon, salt pepper, diced red and green peppers and a little bit of cheese.
To bind it all together mix in a little sour cream or mayo.
Take the mixture and pile it back into the squash skins
Set the squash very close together on a cookie sheet to prevent tipping
Pile high with parmesan cheese, then drizzle with olive oil
Bake at 350 until the cheese is brown, like 20 minutes!
From what I can gather, these are about 7 net carbs each (per squash).
