    Cream of Mushroom Soup

    Amount Measure Ingredient -- Preparation Method

    4 cups sliced mushroom
    4 tablespoons butter
    14 ounces chicken broth
    1 1/2 cups heavy cream
    1/2 cup water
    1 pinch salt and white pepper

    Saute mushrooms in butter until brown.
    Whirr cooked mushrooms in food processor or blender until chopped very fine (this step could be omitted, or mushrooms chopped prior to cooking).
    Put mushrooms back in pan and add chicken broth.
    Simmer for 30 minutes.
    Add heavy cream, water, and salt/pepper.
    Warm up, but don't let it boil.

    Per Serving (excluding unknown items): 443 Calories; 45g Fat (89.8% calories from fat); 5g Protein; 6g Carbohydrate; 1g Dietary Fiber; 153mg Cholesterol; 492mg Sodium.

    This has 3T of heavy cream per serving and 1C mushrooms.

    Edited to add that I also used 1 tsp of ThickenThin not/Starch before I added the cream. I don't think it is absolutely necessary, but I had it, so I used it. No net carbs for this addition.
