  • Spinach Strawberry Salad

    This is wonderful. It is appropriate once you are at the berry and nut rung. Omit the nuts and it is still wonderful.

    Spinach Strawberry Salad


    1 pound spinach, washed and stemmed

    1 pint sliced strawberries

    1 Cup roasted pecan halves- roast 15 minutes at 300 degrees.



    For the dressing:

    1/3 Cup white vinegar

    3/4 Cup Splenda

    1 ½ tsp. minced onion

    1 Cup oil

    1 tsp. dry mustard

    1 tsp. salt

    1 ½ T. poppy seeds

    Prepare dressing in blender by adding all ingredients but the poppy seeds; stir those in last. Toss spinach in dressing. Place half dressed spinach in a salad bowl then add a layer of strawberries, reserving some for the top. Add rest of spinach and garnish with reserved berries and pecans. Serve immediately. Serves 8-10.



    This looks beautiful in a clear bowl. Enjoy!
