I dug this out of my book of cut-out recipes from our local newspaper. I loved it. 
3 pounds zucchini
2 pounds ricotta cheese
5 cloves minced garlic
1 pint heavy cream
2 pounds fresh spinach
1 teaspoon salt
1 teaspoon pepper
1 pound shredded cheddar cheese
1 cup parmesan cheese
Slice zucchini into 1/4 inch strips. In large mixing bowl combine ricotta cheese, garlic,, salt, pepper, cheddar cheese and heavy cream. Layer zucchini, spinach and cheese mixture. Top with Parmesan cheese and bake uncovered at 350 degrees for 1 hour.
