    In the middle of cooking it. I think I beat the egg white too much. OOps. Will report back later how it tasted. Have half an eggplant left so I might try to take another egg white but not beat it so stiff.

    Edited to add that the end result was much like the picture actually. So YUMMY! Mummmm! I will be making this a lot I believe.

      Okay....so an eggplant is an aubergine, yes?

      Zuccini is a courgette, yes?

        Yes. Eggplant is an aubergine (the English used to use the word eggplant, but somewhere along the way, they switched over to the French name. The American colonies continued using 'eggplant'.)

        Also,

        Arugula = Rocket or Rocquette
        String or green beans = haricot vert and Runner beans

        And there are a few more I'm forgetting......

          I KNOW those chili rellenos! Do you know where I can find that recipe, with the egg white coating? That's how we ate it back home and I've never found it again!

            WOW Wonderful! I have had eggplant before but never made it my self. I started out very light with the oil and parmasan cheese. THE MORE THE BETTER! It got really nice and crunchy. The last two slices I had I cut into strips soaked in the egg bath then tossed them in the cheese yummy!! Who would ever want regular fries again!

              i made this tonight, although i skipped the egg whites altogether. i just dipped the eggplant pices in water, coated them with the cheese, and fried them up in olive oil. drained them on paper towels. yummy!
