Those of you from the FL west coast, especially Tampa to Sarasota, probably know about the Columbia Restaurant that started in Ybor City. Their 1905 salad is famous, great and right up Atkins Alley. Here is the recipe courteous of the restaurant itself.
For 4 servings:
1/2 head iceberg lettuce, shredded
2 ripe tomatoes, cut in eighths
2 celery stalks, sliced
1/2 cup Swiss cheese, julienne strips
1/2 cup ham, julienne strips
1/4 cup Spanish olives
4 garlic cloves, minced
1 teaspoon oregano
1 teaspoon Worcestershire sauce
1/2 cup extra-virgin olive oil
1/8 cup white wine vinegar
2 teaspoons lemon juice
salt/pepper to taste
2 teaspoons grated Romano cheese
In large bowl, mix together lettuce, cut tomatoes, celery, Swiss cheese, ham and olives.
Dressing: Mix garlic, oregano and Worcestershire sauce in a bowl. Beat with a wire whisk until smooth. Add olive oil, gradually beating to form an emulsion. Stir in vinegar and lemon juice. Season with salt/pepper. Add dressing to salad and toss well. Add Romano cheese and toss again.
