I saw a recipe on here for faux sweet potatoes using pumpkin. I can't find it now, but I have a little different version and I wanted to post it.
I love pumpkin, but I used to eat sweet potatoes so often that I could not make pumpkin taste like sweet potatoes until I tried it this way and it is close. It is, of course, best with fresh pumpkin, but canned will do.
Per 1 regular size can of pumpkin puree I melted 4T of butter in a pan with 2T of stevia and 4t of maple flavor.....aahhhhhh
I have since used fresh and it is 10 times better and can use less sweetener. I have also mixed almond, or vanilla flavor with the maple and gotten a good flavor.
