  • Ruby Tuesday's creamy mashed cauliflower

    this receipe came out of "top secret receipes"
    Its supose to be the same exact receipe that they use to make this at ruby tuesday. Hope everyone enjoys

    heres the receipe

    ruby tuesday creamy mashed cauliflower

    1 head cauliflower
    3/4 cup water
    1 tbls corn starch
    1/3 cup heavy cream
    1 teaspoon sugar
    3/4 tsp salt
    1/4 tsp black pepper
    1/8 tsp garlic powder
    1/8 tsp onion powder

    1. divide a head of cauliflower into florets that are all roughly the same size. steam cauliflower peices over boiling water for 15-20 minutes or until tender. drain and toss in a bowl of ice water to stop cooking.

    2. when cauliflower has cooled, put them in a food processor along with 1/2 cup water. puree the cauliflower on high speed untill smooth, but with a few peices of small bits for texture.

    3. pour all of puree into medium sauce pan. dissolve the cornstarch in the remaining 1/4 cup of water and add the solution to the cauliflower.

    4. add the cream, salt, white pepper, garlic powerd, and onion powder to the caulifflower and stir. set the saucepan over medium heat and cook, stiring often for 5-10 minutes or until thick.

    makes three 3/4 cup servings

    Gee and I always thought the mashed cauliflower was safe to eat, but they add corn starch and sugar to it. Ah well, they don't serve it anymore so guess it doesn't matter now.

      Yes, let's make it clear that this recipe is not Atkins friendly. I thought it was safe to eat also and have had it a few times in the past. The weird thing is Ruby Tuesday went almost completely the other way in that they used to have lots of Atkins options, but now they have very little entrees you can even make Atkins friendly.

      Just removing the cornstarch and sugar probably won't affect this recipe very much and would make it much more friendly. Thanks for posting Jessica!

        That really gets me that they put cornstarch and sugar in it and called it low-carb. Goes to show you that one person's definition of low-carb is different from another !


        Thanks for the recipe though .. I'm gonna modify it and try it at home!

          yeah I thought that was kinda odd too, I geuss you can never tell what resturants put in there food... much safer to cook it your self

            That really gets me that they put cornstarch and sugar in it and called it low-carb. Goes to show you that one person's definition of low-carb is different from another !
            I guess they consider it low carb compared to their decadent over the top carb laden desserts ... heheheheh! Thankfully most low carbers can see through the scam!

              I boil it blend it add cream and butter,put it in a baking dish add cheese and bake. mmmmm great for a mashed potato craving!

                A friend of ours uses mayonaisse instead of cream and like you adds cheese- it was awesome.

                  If you omitted the cornstarch and just added splenda instead of sugar, this would be atkins friendly right?

                  You could also omit the second cooking on the stove, I would think, as the purpose of the 2nd cooking would be to allow it to thicken with the cornstarch.

                  Cheese could act as a thickener instead of cornstarch too..

                    Why would you need to add sugar to cauliflower! Cornstarch I can see (although it is totally not needed) I can see how it would make it easier for the restaurant to thicken it up, but sugar, what for? I ordered this a few weeks ago and didn't eat much of it because it tasted weird and I wasn't sure what was in it . What I make at home is so much better! I made it for Christmas and all of my non-Atkins family LOVED it! It went better than the mashed potatoes.
