  • Low-carb breadless stuffing

    So good you won't notice there's no bread.

    1 1/2 cups chopped celery with leaves
    3/4 cup finely chopped onion
    3/4 cup butter
    1 tsp salt
    1/2 tsp sage
    1/2 tsp dried thyme leaves
    1/4 tsp pepper

    Cook and stir celery and onion in butter until tender; remove from heat. Stir in remaining ingredients. Bake in a 375 degree (F) oven, covered, until hot and bubbly, between 20-30 minutes.

    What is the servings and carb counts on this? I might make it for Thanksgiving!

      I add crumbled pork breakfast sausage 0 carb of course... yummmmm!

          Just one more for the sage sausage dressing (Holiday Sage Sausage recipe)
          SAGE SAUSAGE HOLIDAY DRESSING

          1 package Jimmy Dean Sage Sausage -- (16 oz)
          3x Flax bread recipe
          1/2 teaspoon Poultry Seasoning
          1 cup Chicken Broth
          2 Eggs -- beaten
          1 cup Onions -- chopped
          1 cup Celery -- chopped
          1/3 cup Butter -- melted

          Combine flax bread crumbs, seasoning, broth, and eggs in bowl. Saute onion and celery in butter in skillet. Add Jimmy Dean Sage Sausage and brown. Drain. Add sausage mixture to bowl, stirring well. Spoon into lightly greased 2-quart baking dish. Cover and bake at 325F for 20 minutes.

            Sounds yummy. When I get to where I can have anything but the induction foods I may have to try this. What rung is flax on?

              You can have flax during Induction. 1TBS for regularity -- I just preferred to have mine in the form of bread. To have more than that you'll have to wait to Rung 4 of OWL.

                Thanks for the information. I think that recipe will have to wait until next Thanksgiving then. Hopefully by then I will be at goal and I can eat it and be in maintenance.

                  I added 6 oz parmesan cheese, 1 large can of mushrooms (for moistness) and 4 eggs and 2lbs. of ground turkey for THE BEST THANKSGIVING LOAF ever!!!!

                  I had to bake it for 1 1/2 hours, but it was great.

                    Sounds delicious! I bet you could do it with ground chicken too and it would be yummy.

                      this was the GREATEST thing i have ever eaten!!!!!1 I think next time though i will cut back on the salt and butter...a little too much of both!! This is why i LOVEEEE Induction!!! I think this is better then regular stuffing!!

                          Anyone have a portion size & carb count on either of the recipes... or the variation with the parmesan and mushrooms?
                          They all sound great, but for those of us still keeping the carbs low, would be wonderful to have the carb count and portion size so we can see how it fits in to what we're allowed.

                            I made this version tonight, only I substituted poultry seasoning for the thyme (since thyme is the #1 ingredient in poultry seasoning, and it also contains sage and pepper). It was pretty good. My husband ate it, too, and he thought it was pretty good.

                            If someone had told me six weeks ago that I'd be eating 1/2 cup celery like it was potatoes, I would've told them they were nuts. But there I sat tonight eating my breadless stuffing and my baked fish. My where life leads us.
