Mashed Turnips & Celery Root!!!
Of all the things I had to give up for the Atkins WOE, I miss my spuds the most. We had them several times a week as a kid, and MAN OH MAN, they are my weekness!!!!
My Boyfriend, also a Professional Chef / Restaurant Consultant, Made this for me and I was PLEASANTLY SUPRISED!!! He had made me mashed turnips before, w/ a cream sauce, they were tastey, but mixed w/ the celery root which adds something that knocks that bitterness down a notch or two. Just cube up equal parts Celery root and Turnips, boil until you can easily slide a knife through them, a few pats of REAL butter, some salt and pepper to taste and mash!!! (I highly suggest boiling them in Garlic flavored chicken broth - WOW!!!)
**make sure you drain them THOROUGHLY!
**mash, but leave some texture to them, they will be a bit lumpy but if you over mash they will become soupy....

I will warn you, they are pricey. This big momma cost me $7.30. Well worth satisfying my potato craving.
I made them along w/ some stewed brussel sprouts, & baked chicken breast seasoned and topped w/ bacon. Ignore the Disney plate if you can, It was SOOOOO yummy!!!
