Tofu muffins

  • Tofu muffins

    This is something I found on the Dutch atkinsforum.... now I personally don't touch the stuff because of the healthrisks of soy but I know that a lot of people don't believe that and keep eating it. So for them...

    two eggs
    two tbs ground flax
    100 gram tofu (a little under 4 oz?)
    some sweetener (optional)
    Blend this very well, makes 4 muffins.
    Bake on 350 for 45 minutes.

    Lots of people there have tried it and were quite happy with the taste.

    I am actually surprised to see you posted that recipe, I noticed in another thread that you think that soy is "very unhealthy" for you. Did you know that tofu is soy? BTW sounds like a good recipe!

      I hadn't heard about soy as a health risk. Off to research I go? What is it supposed to do or not do?

        I do believe that soy is unhealthy, but there are plenty of people who disagree with me (usually vegetarians). I'm not sure whether this is wishful thinking or not, but it's their own decision. I just believe that every decision should be an informed one. And if they're going to eat it anyway it might as well be tasteful

        So, about soy...

          If you search long enough you can find someone telling you anything is unhealthy... from hormones in milk, to mercury in fish, to pesticides in vegetables, and so on and so forth.

            Very true, you can find a good example of that on http://www.dhmo.org/

            However, it can make a big difference who that someone is...
            A lot of anti-soy articles are written by Mary G. Enig, and if you type her name in Google you'll find that she's been one of the most famous and respected scientists in the USA for 25 year already... she's done lots and lots of research and advised many important people.
            She's also the writer of a very good book "Know your fats" that everyone should read, and I rather trust her opinion than that of someone I never heard about.

              I'm sure many educated people have made the argument both for and against Soy, as well as lots of other food items. I hope my post didn't come across as an attack against you.

              Personally, I just don't worry about this kind of stuff. I can live with the carb restrictions because they are absolutely vital for my weight-loss, but beyond that, I am unwilling to further restrict the variety in what I eat. But thanks for the tofu muffin recipe... it looks... interesting.
