    I made this lastnight with some poached salmon .. yu-um

    for 2 people.

    1/2 peeled and thinly sliced jicama (approx. 1 cup)
    1 cup of peeled and thinly sliced cucumber, no seeds
    1 tbs red wine vinegar
    1 tbs mayo

    i added the jicama to a bowl and mixed with vinegar. then tossed in cucumber and mixed in the mayo, a little at a time. the sauce should be creamy and a consistancy of half and half. the cucumber will draw out some water too .. so it will thin out. pop it in the fridge for about 1/2 hour to let ingredients get happy together.
