  • Broccoli-Cauliflower Salad

    My Mother-In-Law gave me this recipe and the whole family loves it.

    1 head iceburg lettuce, chopped
    1/2 head each broccoli and cauliflower, chopped
    1 cup real bacon bits
    1 cup cheese (I use half cheddar, half mozzerella)
    Mix together and put in 9x13 pan

    Cover with mayo, sprinkle with sugar (I now use Splenda), parm. cheese, and more bacon bits.

    My MIL uses an entire jar of mayo on this salad, and a TON of sugar. I have seriously cut down on the mayo (I beat mine to make it smoother and easier to spread) and use Splenda instead of the sugar. Refrigerates well for 2 days if covered tightly...after that it kind of gets wilty. But, it is rare that this salad lasts 2 days in my house, the kids go nuts over it! Enjoy!
