  • egg salad wrap

    7 hard boiled eggs
    5 bacon strips
    mayo

    fry bacon strips and crumble. chop eggs. mix eggs and bacon bits together. add as much mayo to taste. (i like my mixture a little creamy)

    serve wrapped in lettuce leaves.

    you will have a lot of the mixture leftover for later.
    i love this recipe. i made it up one day with a craving for an egg salad sandwich.

      haha....that you chimed back in to swear it was good tickled me.

      I owned and operated a Deli for a couple years. We had a regular customer who ordered a tuna/egg salad sandwich. One side with egg salad, the other side with tuna, slap the two sides together and he was good to go.

      For the longest time it grossed me out, then I remembered my Mom's tuna noodle casserole. She added chopped hard boiled eggs to the mix, and that was yummy.

      So I tried it.

      And it was delicious!
      Admitting...on April 2010 I have been eating low carb for almost 7 years and the lowest I got to was 145. These last couple of years though I got lazy, and over the course of time, gained back up to almost 170. I am back on induction, a week into it now on 4/22/10, doing excellent and seeing results. Once again, my weight goal is 140.

      I just don't have the heart to change the stats below, except I am NOW 46yrs.
