Last night Michael and I were up late and got hungry around 1am so we ate...lol. I made a new recipe from a lowcarb cookbook I just got. I changed it just a little. Anyways it was Tofu French Fries, and we really liked them. Next time I would spray the baking pan because they stuck. I bet it would be good to bake them in a glass baking dish next time. I think I'll do that.
I use Low Carb Ketchup on mine...Mmmm!!! The carbs for the Ketchup are not in this recipe.

Tofu French Fries
Preheat oven to 400*
Cut the Tofu into long, french fry-like sticks.
In bowl beat egg, mayo, dijion mustard, salt, garlic powder, paprika, and pepper to taste. Spread cheese out on a plate. Mix the 2 parmesans together well.
Add a few of the tofu sticks at a time to egg mixture and roll to coat well. Transfer to cheese plate and roll to coat on all sides. Transfer to greased baking sheet.
Bake for 20 minutes. Then put under broiler for a minute or two to brown on top. Sprinkle with the salt and serve. They taste best when they are hot.
Makes 3 servings

- 1 large Egg
- 1 tblsp Mayonnaise

- 1/4 tsp Sea Salt

- 1/2 cup Parmesan Cheese (this is what I did different. I used 1/2 cup of the powder Kraft Parmesan Cheese because I thought it would coat it better than just the Fresh Parmesan. If you just use the Fresh, it calls for 1 cup).
- Sea Salt
- Fresh Ground Pepper
