  • Cream of Cauliflower Soup

    I've noticed a few people that are feeling under the weather here lately. Some are eating chicken soup which is ideal. If you're tired of chicken soup Give this a try. Cream of Cauliflower Soup: 3 tbls. butter/ 3/4 c diced leeks/ 3/4 cup diced celery/ 1 quart chicken broth/ 1 package (10 oz) frozen cauliflower/ 1/2 tsp.guar or xanthan (optional)/ 1/2 cup heavy cream/ salt and pepper. 1.) Melt butter over low heat, and saute the onions and celery in it untill they're limp. Combine with the chicken broth and cauliflower in a large sauce pan, and simmer untill cauliflower is tender. 2.) Use a slotted spoon to transfer the vegetables into a blender, and then pour in as much of the broth as will fit. Add the guar or xanthan (if usinf) and puree the ingrediants. 3.) Pour the mixture into the sauce pan. Stir in the cream, and salt and pepper to taste. Yield: 4 servings, each with 9 grams of carbohydrates and three grams of fiber, for a total of 6 grams of usable carbs and 7 grams of protein. This wouldd be really good with bacon too!

      Thanks for this - I love soups, especially in the fall/winter when salad don't cut it for me! I'll be saving this

          im totally making it tomorrow. i just bought 2 heads of cauliflower for twice baked potatoes, but one is definately going for this soup. yum! (sneeze).

            Sherri, you are right! It is awesome with bacon! I cooked a couple pieces of thick bacon in a pan and sauteed the onion/celery in the bacon grease instead of the butter. Yummy!
