Side dish for a Caribbean themed dinner?

I'm going to a dinner party next week at my sister's house - she's making a Caribbean pork tenderloin and asked me to bring a side dish. Pretty much everyone there is on Atkin's. I was thinking maybe some butternut squash sweetened with Splenda and cinnamon/nutmeg for kind of a sweet potato dish, but that seems kind of plain. Anyone have any other suggestions? Thanks!

Check out recipesource.com, they have a huge section of caribbean recipes. I haven't cooked much caribbean food myself, so I can't really recommend any one thing over another, but look around and you might find something that looks fun.
