This is my husbands concoction and he named it as well. LOL But very good and can be done inside or out.
Use either a metal cake pan round or rectangular, or heavy duty aluminum foil.
Cut up your choice of low carb vegetables in qualtity to suit your family.
I use:
yellow squash, broccoli, onion, fresh sting beans, mushrooms, etc. More variety the better.
Slice a stick of butter over it all ( Adjust amount according to how many people you are serving) Drizzle olive oil over it. (Sounds crazy to use both but believe me it is good) Sprinkle with your favorite low carb seasonings,
Seal tightly with foil and set on grill while meat is cooking. Can be done just as easily in the oven. Adjust serving quantities to your Atkins level.
