My new favourite side dish! I adapted this from a jalepeno popper recipe as run out of jalepenos!
(serves 2)
Ingredients
1 x courgette (zucchini)
approx 50g cream cheese
Small slice of onion - finely chopped
sliced hot chilli (if liked)
4-5 bacon slices
Method
Cut courgette in half. Use a spoon to scoop out a little flesh to make room for your stuffing.
Mix cheese, onion and chilli together - spoon mixture in to courgette half. Wrap in bacon. Place on baking tray and bake in oven for approx 30 mins - start at 160'/320' and then turn up oven after 15 mins to crisp bacon.
I love these served with any meat or as a starter. I hope you like them.
