I'm a big fan of Chef Jose Andres and watch his tv show, Made in Spain, almost fanatically. On one program he made gazpacho, the famous Spanish cold tomato soup. He said that the proportions are 3/4 tomatoes, 1/4 cucumber and sweet pepper, 1 garlic clove, and plenty of good olive oil. I wasn't a fan of gazpacho....until now! 
Here's his recipe, which is totally Atkins friendly. Skip the bread croutons if you are on Induction.

Here's how I did it.
Into a blender, I put:
3/4 pound of tomatoes, coarsely chopped (it came to about 2 1/2 cups), 1/4 cup of peeled cucumber slices
1/4 cup red sweet pepper slices
1/2 of a clove of garlic
1/3 cup water
scant 1/4 cup of a fruity olive oil.
1 tablespoon of sherry vinegar
a pinch of salt
Puree until very, very smooth and refrigerate (which I didn't do, but it would be more refreshing and tasty if I did!)
On my serving, I drizzled on more olive oil.
For the entire recipe:

fat:54.8 grams
protein:3.6 grams
carbs: 16.1 grams
fiber: 5 grams
