  • Herbal Heirloom Tomato Pickles

    I tried it last night and tasted them this morning. Very easy, Very fast, Very good.

    I used basil for my herb but oregano, thyme, rosemary, sage, tarragon, etc. would be good too. I'm sure you can use dried herbs too, just use half the amount of dried as you would fresh.

    Also, I used a ripe tomato, a semi-ripe tomato and an unripe tomato. The ripe tomato was kind of squishy after it was pickled---the flavor was fine but the texture wasn't to my liking. But the semi-ripe and unripe tomatoes retained a firmer texture, which I did like.

    They aren't terribly sour, because the amount of vinegar is rather small. But they definitely don't need any type of sweetener.

    Oh, and I didn't use the optional tablespoon of lemon or lime juice, because I didn't have any lemons/limes. But again, the tartness was just right, imo.

      these sound good -- I've never had pickled tomatoes. Could you water pack them to make more to eat later?

        I don't know about that. It's a quick pickle meant to be eaten within a week. Maybe there are more traditional type tomato pickle recipes?
