Ok so I went through a vegan phase before coming back to Atkins and bought the book "Skinny Bit**"
It has the most amazing dressing called Agave Dijon and I made it. TO DIE FOR! Hubby said it was so good I never have to buy another store bought dressing again! LOL
Anyway, now that I am on Atkins I can't have it, (Agave Nectar), so I made it with splenda and stevia instead and it tastes exactly the same.
I will call it Amazing Dijon Vinaigrette

1/4 cup dijon mustard
1/4 cup red wine vinegar
2/3 cup olive oil
2 cloves garlic (through garlic press, you want it crushed good)
1/4 teaspoon fine sea salt
1/4 teaspoon pepper
1-2 packets splenda or 1 packet splenda and 1/4 tsp stevia plus (to your taste, I would start with 1 packet splenda and add from there, but you want it sort of sweet, as its kind of a honey mustard vinaigrette, the original recipe calls for 1/4 cup agave nectar)
Wisk all ingredients and store in air tight container in fridge or eat immediately on your favorite salad. This would make a great marinade for chicken or pork also. The longer it all marinates together the better! YUMMY
