  • Turnip Hashbrowns!

    A while back I posted the turnip mashed potatoes recipe. Today I was deciding on breakfast and wanted something extra special with my eggs. Here's what I did...

    I peeled a med/large turnip and grated it using my cheese grater. I melted a bit of butter in a non-stick pan and fried the grated turnip with salt and pepper. I cooked mine until a good portion was nicely browned.

    That was it! It was good! Not quite the same texture on some of the less-browned turnip, but it was still good! A great way to add an induction friendly veggie to your breakfast. I would probably be awesome with low carb ketchup or a little onion added!

    Ingredients

    -Turnip grated to make about 1 cup
    -About 1tbs butter
    -salt and pepper to taste

    Only 4.8 carbs (according to fitday)!

    Lastly, a picture of the finished product with eggs.

    This looks WONDERFUL!!!

    Thanks so much for taking the time not only to post the recipe but the picture as well...very nice and much appreciated!

    I'm going to go out tomorrow and purchase turnip and give it a whirl!

    4th major goal met – Reached “Onederland” June 6-09 – 198 lbs.
    5th major goal met - My 1 yr. Atkins anniversary - Weighing 184 lbs. this day
    Current weight – 167.2 lbs.
    Goal weight - 150 – 160

      Yay! I'm glad you're going to try it!

      I try to post pics of the food because it helps to see what the finished product looks like!

        Looks great!

        My latest veggie is chopped onion and radish. Saute in butter.
        Here is a link below.

        I use red onions. I cut my radishes pretty small, and so they are not too greasy, I blot them a little with a paper towel. Sea Salt and fresh ground pepper--Delicious! I make them to go with eggs in the am, and also for dinner as a side dish for almost anything! I also only make an amount that I will eat, not necessarily a whole 16 oz recipe. But once I did save some for the next day as a "test", and they tasted fine after being reheated. I made some for my Mom, (she isn't on Atkins) and she liked them too, though she felt it tasted more like onion than radish. Which I guess makes sense since onion is stronger than radishes. But they look like hash browns and taste fantastic as a substitute to me!

          Ohhhh these little jems are wonderful! I enjoy them very much! I JUST purchased some more radishes and onions yesterday so that I could make them tomorrow!

                I know Carole, I actually get "cravings for them".
                And as I said many time, until I discovered this recipe, I NEVER knowingly ate a radish in my entire life!

                They do take a little longer time to prepare
                than tossing a veggie into a pot of boiling water, but it is worth it.

                And after I have cooked them until they are cooked through, I watch over them but cook them on high until the onions are almost burned...but you have to watch them! Oh, so delicious!
