Cauliflower Puree' - Substitute for Mash Potato/Potato Patty
1 head fresh or 1 1/2 pounds frozen cauliflower
4 T butter
Salt and pepper to taste
Steam or microwave the cauliflower until soft
Drain it thoroughly, and put it through the blender or mixer until it is well pureed. Add butter, salt and pepper to taste.
I use the left over puree for frying and making potato patties. I take the patties, add one egg blend well, and in a skillet add a small amount of olive oil and cook for med-hi and turn until brown. I sometimes add cheese to the top. I serve this with bacon and eggs
Yield: 6 generous servings, each with 5 grams of carbohydrates, 2 grams of fiber, for a total of 3 grams of usable carbs and 2 grams of protein.
