Maybe I'm not as dim as I thought I was, cuz I just made an induction-friendy personal pan pizza in the microwave ... and it looked and tasted just like the genuine article.
Here's what I used:
1 round glass personal casserole dish (approx 4" diameter at top.
Topping:
4 pepperoni slices
1 oz cheese (I used Monterey Jack)
1 Tbls Salsa (I used my homemade stuff ... onion, tomatoes, jalapeno, etc)
Crust:
1 Tbls water
pinch salt
pinch garlic powder or garlic salt
pinch onion powder
pinch dry basil
pinch dry oregano
1/2 packet Splenda
1 Tbls Flaxseed meal
Here's what I did:
1. Waved pepperoni on paper towel for 20 sec to get rid of a little grease.
2. Arrange the pepperoni on bottom of casserole dish
3. Dob a little tomato salsa in open areas between the pepperoni slices.
4. Cover the pepperoni with cheese (sliced or grated)
5. Layer more salsa over the cheese
6. Wave for 30 seconds to melt the cheese
Mix the salt, garlic, onion powder and Splenda with the 1 tablespoon of water. Add flaxseed meal, basil and oregano to the water and mix together.
7. Spred the Flaxmeal crust over the toppings in the casserole dish.
8. NUKE the pizza till the top (Flaxseed meal crust) hardens (about 3 minutes for mine).
9. Remove pizza to plate to cool (I cooled it pepperoni side down in order to let the crust set fully).
10. Remove pizza to cuttingboard (pepperoni side up) and cut into slices with a pizza wheel.
11. Wolf it down with a satisfied smirk on yer face
Obviously, top with whatever you please. You can pick this up and eat it just like a real personal pan pizza.

Carbs:
Flaxseed meal (1 Tbls) = 0g (2g total - 2 g dietary fiber)
Homemade Salsa (1 Tbls) = .75g
Cheese (1 oz Mont.Jack) = 0g
Pepperoni (4 slices ) = 1
Splenda (half a packet ) = less than .5g
Total Carbs = 2 to 2.2 grams
Total Calories = 252
Total Fats = 20.25g
