  • Swiss cheese lettuce rollups

    OK... I am not much of a cooking person but I made a snack just a minute ago that rocked my world!!!! :icondance

    Take two romaine leaves, stack one on top of the other, and cut in half horizontally. Discard the crispy halves (I keep it for salad later) and keep the top halves.

    Take one of the leaves and squirt mayo on the center of the leaf (1 tbspn). Take an ounce of swiss cheese and place on top. Then, roll the cheese up in the leaf like a wrap. Take the second leaf and wrap around this. (Its important to use 2 leaves of lettuce - for some reason, you need a couple of freshly washed pieces to bring out the flavor).

    Eat like a wrap - OMG this is delicious! When I had a bite, I actually thought if I can eat these, I can do this indefinitely! )

    And the good news is this snack has:

    Carbs: <1g
    Fat: 19
    Protein: 8

    See - I have to say one of my all time favorite foods is swiss cheese and lettuce sandwiches with mayo on any kinda bread - and honestly, when I ate this I didn't miss the bread AT ALL. If you are a cheese sandwich freak you have to try it!

    That sounds yummy- I love swiss cheese too! Sometimes I like to add hard salami with it too in the wrap!

      OOh! That's a good idea! I imagine you could add pretty much any kind of deli meat, too and make a nummy wrap-wich!
