  • ONE carb or less!!

    How about posting some of your favorite one carb or less snack! I need some new IDEAS!!!!!! Please and Thanks!!

    Pork rinds. I get the plain ones and flavor them myself. When I want something sweet it is LC cinnamon sugar substitute. Hot and spicy a little cayenne pepper. You can make any flavor you want.

    Cheese crackers made by slicing a block of cheddar into 1 inch cubes and then slicing them about an eight of an inch thick. So far according to fitday I have .218 carbs. Then I put then on parchment paper and nuke until bubbly and brown about 1 min in my microwave. When they cool they are like cheezits only very low carb. Depending on what kind of mood I'm in I sprinkle then with seasonings or eat them plain. DO NOT MAKE MORE THEN YOU HAVE CARBS FOR BECAUSE IT IS HARD TO STOP.

      More Snacks

      I'm new, but I think I found a couple.

      I made homemade beef jerky from shoulder? that was sliced thinly. Used w-sauce and seasoned salt to flavor. Baked 6 hours at 170.

      I also made a beef/cream cheese/chive dip I ate with celery. Salt to flavor.

      I bought a couple bars that were net 2 carbs - they aren't bad.

      I also tried to make sausage balls w/o flour. Didn't work that well -still working on a flour free recipe.

      Unfortunately, I'm not in ketosis or moving on weight, except maybe up (horrors) I have 50 lbs to drop and desperately hoping to figure out what I'm doing wrong. Good luck w/ the snacks!

        In any recipe except for baked goods, white flour is a) not necessarily the best choice from a purely culinary standpoint, and b) very easily substituted with possibly better results.

        You can bind your meat with any of the following: egg white powder or powdered instant eggs, soy flour or soy protein powder, oat flour, wheat gluten, dry bean dip mix or powdered instant beans, Ketatoes, Not/Starch, Atkins baking mix, nonfat dry milk, a whole beaten egg. Using protein as a binder instead of white flour can actually give you better results when you're dealing with meat.

          if you are going to use any of the compounds metioned in the previous post please remember what stage of Atkins you are on and choose one that is allaowable for yuor stage and the level of the carb ladder you are on.

          Several of those binders listed are not induction friendly.

            Thanks for the reminder. You're right that not everything I mentioned as a possible flour substitute is definitely NOT okay during Induction. I'm looking forward to later phases where I have more leeway and am doing some culinary thinking ahead.

            While I can't recommend this approach generally, I am cheating a wee bit on Induction because I'd rather enjoy myself a little more and stick to the diet for life than get discouraged and quit early. I am only cheating with tiny amounts of low carb stuff and staying within my 20g carb allowance, but of course it is still cheating. For me, I think the net result of sneaking 1-2 not-too-awful carbs a day from soy or oats is worthwhile because it means I am more likely to stick to the program long term and be happy on it. I'm definitely in ketosis and as long as I avoid sweets I don't feel tempted to eat the bad stuff.

            When I say cheating a wee bit, I mean powdering a salmon fillet (which was everybody's dinner, not just mine) with a teaspoon of dry Ketatoes so that it gets an evenly browned crust. Net result, less than 1 carb per portion. Also I baked some cheese snack crackers with 2 cups of Parmesan and sharp cheddar, garlic and cracked black pepper and 1/4 cup soy flour. One weighed-out portion is 28 grams and not much over 1 carb, and I'm not eating more than one portion per day. I consider these kinds of cheats on the same level with snacking on the bars and shakes and other packaged products, except that I have a much better idea of what I'm doing in my own kitchen and there are no mystery ingredients.

            I am aware of the problems of cheating on the Induction phase; if you cheat with bad carbs (like sugar) you get cravings for bad munchies and other problems. If you cheat with anything you can get slower weight loss. My aim is not rapid weight loss; it is developing healthier eating habits for a lifetime. I don't actually care about the weight part.

                (1 serving is about 7 cubes) Cheese cubes baked for a couple of minutes until they are slightly brown. Texture of a potato chip and tastes like a cheese-it cracker. Yummy!! :flowerki:

                    Has anyone tried egg for the sausage balls instead of flour? I'm just thinking that might work, but I don't have the ingredients at home right now.
