  • Cheese crackers

    Hmm..I dunno if someone else has posted this yet..Probably..
    anyways, Cheese cracker: Get a slice of cheese (not thin, not thick) and place on microwave safe plate sprayed with cooking spray. Nuke it for about 45 seconds or until fairly firm with little craters. Let cool for a minute or so.
    If you do this right, it will have a cracker like texture and taste very similar to cheese crackers.

    You can also shallow fry pieces of cheese, it has much the same effect and is lovely.

        Or you can bake grated cheese in a moderate oven (10 to 15 minutes). I made these for a morning tea at work and they went in nothing flat.

          Okay...apparently I "didn't do this right"...I ended up with grody cheese puddles that I couldn't do anything with! I think I cooked them too long, but has anyone else tried this with any success? Give a shout out!

            I don't think you cooked them long enough. They should look dry and bubbly. MOG make taco shells with them. YUMMMM

              I take a piece of cheese, those ones you can buy in stick form (not string cheese, because that's mozzarella, but they make colby jack, cheddar, etc.) and cut it in about 12-16 pieces. I space them evenly on parchment paper, and let them go for about 1 minute in the microwave. Let them cool, and they are delicious and crispy. The parchment paper is the key to making them crispy. I also do pepperoni w/mozzarella on parchment.

                Thank you soooom much! I am looking for something to crunch on that is like a chip...this will be wonderful...I will try the parchment paper, but I hope the problem isn't just my microwave...??? I'll let ya know, thanks again!

                  Do these "cheese crackers" need to be refrigerated after you make them? It sounds like a great snack! I would love to carry some with me while I am on the go.

                      Oh thanks! I just made these in the microwave on parchment paper (took 20-30 seconds each), and they were so good! As we were eating them, my husband said, "Now all we need is taco shells." So I rolled one of these cheese crackers in half, and let it harden, showed him and let him eat it. He was so excited! (looks like tacos tomorrow night!) ha ha ha

                        My husband and I have been watching the World Series and he breaks out all the snacks like chips, pizza rolls and all the stuff I can't have (Totally not fair) so I've been making cheese crackers and they rock! I take cup of sharp shredded cheese and stick it in frying pan which is already heated. I fry the cheese for a good 3-4 minutes on each side (Medium Heat) then when I remove it I let it sit for about 5 minutes to let it get crispy and cool down. I swear when it's all done it tastes just like cheese-its to me and that was definately a problem before Atkin's, I'd eat a whole box so this is the next best thing!

                          Kimberly, I'm not tempted by a lot these days, but for some reason, those little pizza rolls really get to me. They are EVIL!
