  • Cinnamon Bun!

Well I was just experimenting tonight and I came up with my version of an induction cinnamon bun. So I thought I would share since it was delish!

    Tamara's Induction Cinnamon Bun

    Ingredients

    1 egg
    2 tablespoons of butter
    1/2 teaspoon of baking powder
    2-3 tablespoons of cinnamon
    3 pkts splenda
    3 tablespoons flaxseed
    2 oz cream cheese

    Bun:

Find a circular shaped dish or small bowl.(If you dont have one anything is fine except it will be more like cinnamon bread)

melt butter first then add 1 egg - stir vigorously until mixed
    add 3 tablespoons of flax
    add baking powder
add cinnamon and 2 pkts of splenda
    mix.

    Let stand for 2 minutes.

Microwave for about a minute and 45 seconds until it has risen and is fluffy in the middle. (may be slightly different depending on your microwave.)

    Icing:

Mix cream cheese and 1 packet of splenda. Add a dash of cinnamon if you like. Microwave for 20 seconds.

When topping is done drizzle over the bun and voila induction cinnamon bun. These are pretty tasty!

    Carbs -

    0.5 x 3 - splenda = 1.5
    egg = 0.5
    flax = 0 - 0.5

So it comes out to about 2.5-3 net carbs. This might use up your splenda servings for the day so watch the splenda. If you go over just forget the icing all together and drizzle it with butter and cinnamon.

Looks like a great recipe, but your carb count is off quite a bit.

The 3 tbsps of flax is 10 carbs less 5 fiber, 5 net carbs. Splenda is 1 carb per pkt for 3 more, 3 tbsp of cinnamon is 6 carbs(!), the cream cheese is another 2 carbs, and the baking powder is 1! So that's 22 carbs, less 5 fiber, for 17 net carbs. Sorry... the only reason I questioned it is because I just sat down to record my 3 tbsp of flax for breakfast, and knew it was 10 carbs (less fiber).

Anyone new to this WOE, please make sure you look at every single ingredient for the carb counts -- thinking it's 3 net carbs and having it actually be 17 is enough to have you posting "Why aren't I losing??" real quick!!

Just make sure you read Joan's carb calculation above! 17 carbs pretty much uses up your allotment for the day if you are in induction! :yikes

I had read this post when it was first listed and then saw the post with the carb counts and said SEVENTEEN - not going to make this recipe!! But then last night I read another post by cobradan that questioned the carb count. I went back to the recipe and figured I could tweek it to work bec ause it sure sounded yummy. So I modified it - used just 2 teaspoons of cinnamon, 2 packets splenda and no cream cheese. It was wonderful!!

While I think the original count was a bit low, the count of 17 grams is a bit high.

One egg is anywhere from .2 to .6 carbs depending on who you trust, so I'll just count it as half a gram.

2 tablespoons of butter, no carbs.

.5 tsp baking powder is .5 grams carbs (from the fillers)

3 Tbl cinnamon is between 3 and 5 grams carbs, so I'll settle on 4, again, depends which reference you trust.

Splenda is a little less than 1 gram per packet. There are 12 mg of sucralose per packet, so that leaves .88 grams of filler per 1 gram packet. The bulk fillers used are slightly less potent than pure sugar, which comes in at around 1 carb per gram, so, I would count each Splenda packet as .75 carbs, so, 2.25 grams from the splenda. Now, if you can use liquid splenda or DaVincis syrups, this becomes 0.

Each tablespoon of flax seed is between .5 and 1 grams of carbs, again depending on who you trust. I will go with a median number, .75 grams, so 2.25 grams carbs from the flax.

2 Oz cream cheese is about 1.5 grams carbs.

So, add it all up we get: .5 + .5 + 4 + 2.25 + 2.25 + 1.5 = 11 grams per bun. So, still fairly high for an induction recipe, but not as bad as 17 grams.

Yea, better than 17 ! BUT for someone on induction that's still gonna be 1/2 their daily carb allowance! Dosent' seem worth it to me. :no After induction maybe depending on your allowance.

barelysane did you actually use 3tablespoons of cinnamon in yours? was it edible?

well lets fix a few errors in the recipe anybody who cooks with flax knows that should be flax seed meal as she didn't say to grind it so that cuts the flax carbs in half. I use the USDA counts for it so the flax meal is now a respectable 1.14 net carbs. if they have corn startch free baking powder it is carb free if not it is .55 for the 1/2t
the egg is still .6 the cinnamon at 3t not 3T is down to 1.74 making it 6.03 before they add their sweeteners

if you use oil of cinnamon and a liquid sweetener you have it down even more to a respectable 4.29 which is very close to a mock danish with flax seed meal added.

3 sweeteners is the whole days allowance too so be very careful about feeding your sweet tooth with this recipe.

I only used 2 teaspoons of cinnamon, 2 packets of splenda and I ommitted the cream cheese altogether - I don't think I was missing anything in the way of flavor by doing it this way. This is the count I came up with - correct me if I'm wrong:

                          3 T flax=2.3
                          1/2 tsp baking powder= 1.2
                          2 packets splenda=2
                          2 T butter=0
                          2 tsp cinnamon=2.4

So I see this as being 7.9 carbs.

This was filling and totally yummy! I can see it being an occasional treat or even a breakfast for me.

I'd be inclined to leave in the cream cheese and leave out the sweetener. I find that the longer I'm on this WOE, the less sweetener I need. I so rarely use Splenda or anything else, it could go bad in the cupboard. I certainly don't keep them in business.

Try experimenting with less and less sweetener. You'll be surprised at the results and the acceptance of your "sweet tooth". You may get to the point of eliminating it altogether. Your body adjusts, just as it did to eating profuse amounts of sugar before this WOE.
