Hey girl! I was just reading all the post for that low-carb torilla wrap post. My goodness there were a lot of good posts!
So anyway, I thought of another wrap for you. This is one of my all-time favorite snacks and in the spring and summer, I eat them for lunch and late dinners. But........you will have to use the eggwhite wrap until you get to the place where these are allowed, if these wraps are ever allowed on Atkins, as will I. If they are never allowed, i think i will be fine with the eggwhite wraps.
The original is a rice paper that you find in burrito-sized rounds in a clear container in the Asian food section of the grocery store or at an asian food market. They get dipped in cold water for about 5 seconds before using....
BUT....use the eggwhite wraps and add this....a large leaf of fresh curly leaf lettuce, or Boston Butter lettuce, about 8 fresh basil leaves, BBQ (roasted) pork loin and/or whole shrimp. Fold in the sides and roll up...just like an eggroll or burrito. The usual sauce is a mixture of Hoisin and peanuts, but I bet the ladies and gentlemen on here could think up something better. I was thinking maybe use a sugarfree nut flavored syrup, or even a salsa, or hollandaise. I am going to experiment with some heavy cream and broth base...I will let you know.
