Might look awful, but celery root and fresh pumpkin are the only Induction veggies that can be fried like potatoes and actually stay crisp. Turnips and jicama become soggy. But celery root and pumpkin chips I've kept in airtight bags for at least a week---and it's nice to be able to have a snack chip once in a while.
Yeah, if I see them, I might pick them up if they don't BITE me first!

Yeah, my neighbor had a small sugar pumpkin tht lasted through the winter in her root cellar. She gave it to me early this year and I tried frying it like chips.
You follow the same instructions for the celery root chips. Peel the pumpkin and slice it thinly, then deep fry. They have a nice sweetish flavor.
My pumpkins didn't grow this year, so I'll have to wait until the fall to buy one.
Oh man, salt and vinegar chips!! I will have to look for one of these fugly things!! Does it look like a brain all the way through it or do you cut the brain looking part off??

Yeah, people deep fry kale, but that's too scary, imo, because it will splatter. Whenever I do the crunchy kale recipe I bake it per the recipe by Mollie Katzan.
So let me get this straight I can make chips? Well I am just loving this diet more and more. Its called Celery Root or Celeriac. I will be checking into that tonight. Thanks for the snack idea how perfect.
You can also make chips or fries out of fresh pumpkin. If you live in North America, now is pumpkin season. So you can thinly slice the peeled pumpkin and deep fry the slices for chips. Or slice the peeled pumpkin into fries shapes and fry them.
Just remember, celeriac/celery root and pumpkin are on the "other vegetable" list for Induction and are limited to 1 cup daily.
