  • Beef, Cheese & Red Pepper....

This is my first time posting a snack!

Please forgive me if it has been done before!

Okay so I don't know the exact carb amounts but I'm sure you clever guys can work that out for yourselves, depending on the amounts you eat!

(Hope it is nice and safe coz I've had this a couple of times this week on induction!)
    Reeght here goes...

Take thin cut slices of roast beef (Careful if it's from a deli..check for added stuff)

Sprinkle a tiny amount of cheese over it (Cheddar works good but so would a soft cheese)

Finely chop some red pepper (Bell pepper think it's called in the US?) from your allowance. Sprinkle on top of cheese.

If you like you can add a bit of mayo.

Then roll the beef into a sausage shape. Gently press down a bit.
Then cut into bite size pieces.

    Voila!
Tis a great finger food. Fab for snacking and also satisfying!

One of my favorite little roll up snacks is a piece of deli ham (sliced thick, but not too thick) Spread about 1/2 TBSP to 1 TBSP of cream cheese (better just a bit softened) on one half of ham slice - sprinkle with just a bit of shredded cheese and garlic salt (or powder if you prefer) add 1 whole dill pickle - roll up tight and cut into pinwheel type slices -- it doesn't sound appetizing, but it is truly yummy!!
