Maybe someone already posted this idea but if not, maybe someone else will like these...
You know those 'Atkins Revolution Rolls'? They really come in handy!(and have less than 1 carb)
I use them to make little mini pizzas. I don't even bother with tomato sauce. I just spray a little butter on the rolls, sprinkle on seasonings, add mozzarella, red and green bell peppers and pepperoni. Then I just bake them for a few minutes in a toaster oven.
If ya try it, watch em so they don't burn - 'cause they can quickly. Maybe broiling would be better? I'm no expert. I also don't suggest microwaving them because they just get nice and soggy.
