  • Blueberry Macaroons

    I have been experimenting with making lowcarb macaroons without using artificial sweeteners and just made these which have enough sweetness from the blueberries that even my husband who has a very sweet tooth approved of them. I shall need to hide them from him if he gets peckish or he'll eat them all in a day!!

    I used homemade dried blueberries as the commercial ones I can buy all have sugar or fruit juices added in the drying process

    I forgot to photo them in progress so have snapped a pic of them in their storage dish.



    Ingredients
    1.25 ounces of dried blueberries
    2 T cold water
    0.25 ounce (1/2 T) of melted butter
    2 medium eggs
    200 grams (2 .5 cups) unsweetened dessicated coconut

    Method
    Snip the blueberries into smallish pieces with scissors, add a couple of tablespoons of cold water and zap at half power in the microwave for half a minute or so till the liquid is absorbed.
    Then add the melted butter and mix.
    Beat eggs and add to the blueberries and mix.
    Add the coconut and mix thoroughly

    Spoon into 21 mini muffin cases or make piles on a baking sheet and bake at about 150 C (300F) for about 15 minutes till golden brown.

    I use silicon baking dishes and sheets so if you don't have those you might need to oil or spray pam on the muffin cases/baking sheet to make sure the macaroons dont stick.

      Hi Elizellen,

      They look yummy! I don't like to use sweetener either, so good to hear about these. Nuts can add a certain sweetness too, can't they - I started making chocolate 'mousse' with just almond flour, cream and cocoa powder. I have trouble with my portion control (and frequency) with it though!

          the berry rung is my next rung, and i cant wait to make these. Is it not possible to use fresh blueberries then? how do you dry them out?

              Would like to know too! Is it possible to use fresh berries as that would mean the juices would seep through the 'flour' making them more yummy??
              Need to try making some low cabr goodies as i am missing 'something' and end up having 'just one biscuit' and binging have set back my weightloss 3 times in the last month
