  • jalapeno cheddar muffins

    that is to say, jalapeno cheddar COCONUT muffins. the coconut flour imparts a bit of sweetness, but the flavour overall reminds me of cornbread. if you hate coconut, give this one a miss.

    3 eggs
    2 tbsp butter or coconut oil (I use half and half), melted
    3 tbsp heavy cream
    pinch of salt
    1/4 cup + 2 tbsp coconut flour
    1 tsp baking powder
    1 cup shredded sharp cheddar
    1 jalapeno pepper, seeds and ribs removed (unless you like it hot), minced


    whisk the first 4 ingredients together. add in the flour and baking powder mixture. mix in the cheese and peppers. drop into 6 greased muffin tins (or ungreased if you're using a silicone muffin pan). top with a little additional shredded cheddar, if desired. bake at 400 for about 18 minutes, or until the tops are golden brown.

    these are so good out of the oven with butter! the coconut flour has a LOT of fiber in it (5 tbsp = 30 carbs - 27 grams of fiber!).

    If you want a sweet option, omit the cheese and peppers, add in some of your favourite sweetner, and some coconut, or blueberries if you're on the appropriate rung!

    these are not induction friendly, but they're pretty delicious.
