    This is so yummy, good way to get the veggies up!

    Using a veggie peeler thinly slice 2 courgettes(zuch)

    Optional phase: Marinade with some olive oil, paprika,cayenne pepper-- other legal herbs

    Heat up the george foreman

    Place the strips on the grill for 5-8 minutes until crispy and browned

    Yummy as is for a snack, could serve with cheese on top or with a dish of mayo/Guacomole-- Chips and dips style!

    Sounds yummy and a great new way to use my foreman grill.

    I have one question though, your stats say your current weight is 103 so you should zoom through the rungs and be on maintenence.

          This sounds great! Today, before reading this post, I tried to make fried zucchini. I sliced up zucchinis and coated them in egg, them smashed pork rinds. Let's just say, it didn't turn out as planned! The coating didn't stick, but I still fried it all up in some butter. The zucchinis darkened right up, and the pork rinds added a nice crunch to eat bite! I can't wait to try this recipe with the zukes in my fridge!
