  • Meringue Cookies

    Preheat oven to 400.

    Beat together 2 egg whites, 1/4 tsp cream of tartar, 1/4 tsp salt. . .
    .until stiff peaks form. Slowly beat in 2/3 cups sugar equivalent such as splenda, 1 tsp vanilla
    extract or low carb davinci syrup & 1/2 cup mini semi-sweet choc chips (which I never add).

    Place rounded table-teaspoon size amounts onto pan (which has been lightly sprayed w/olive oil spray). Place pan on center oven rack & IMMEDIATELY turn oven off. Leave in oven (at least) 6 hours (overnight works well) without opening oven during that time.

    When removed from oven, store in air-tight container.

    Sounds great. Think I'll try it tonight since it will block the oven for six hours at a time. Thanks for suggesting overnight.

      You know, I was just thinking about meringues yesterday. They are one of my faves - like cookies and help with the sweet tooth issue i have. Seeing your recipe just confirmed that I'm going to give it a try (sans chocolate chips, of course). I used to make them with sugar in the "old days" (i.e., before last week )

        Okay, I made them on Saturday night and I have to say that I thought they were putrid - I did not like them at all. I followed your recipe exactly, but I think the oven was too high and they tasted too much like artificial sweetener. Also, the texture was weird.

        I may try again with: 1. less sweetener; and 2. a lower oven temp.

        I'll keep you posted!

          Yeah, Mine were awful too. Maybe it's the brand of sweetener. I can't get Splenda in France.

            Yesterday I made the meringue recipe from the Recipe board (link below) and they turned out very well. Meringues are definitely an aquired taste, so if you haven't tried them, give this recipe a whirl. Mine dried out too much, but they are still nice to have around for a little munch!!
