      Hi, Everyone

      Just for the record - this board is based upon the 2002 version of Dr. Atkins New Diet Revolution, and Julie is spot-on when she stated that this treat is not allowed until Rung 3.

      Of course, it is entirely up to each of us, individually, to make the decision on whether we want to follow the book to the letter or not. But those of us who have been here a long time have a responsibility to point out to those who might not be aware, when things are not Induction friendly.

      Again, it is up to each of us to follow the plan in the way that we wish to. I think it is unfair to treat Julie as if she were wrong... if you knew her like I do, you would know what a bright, caring, and helpful individual she is. She was only stating a fact, and I didn't see any judgment or hostility in the way she did it.

      By the way, to those who wish to follow the plan in the way the Dr. A described, there are very many things that you can make without having to jump rungs.

        all this talk about coconut makes me crave mama's famous southern coconut cream cake.....it is NOT induction friendly...not even atkins friendly. but is IS a fond memory

          Aries, Julie is completely right about the book! I am not sure what book you are reading, but this board goes by DANDR 2002. At the end of chapter 14, where the OWL rules are summarized, it says:

          I don't see how he could have prescribed it more strictly than by making it a rule.

          Then the carbs and calories. Let's say we take averages -- 5 oz ricotta cheese and 2 tbsp coconut milk... which, as you say, should have under 100 calories and 3 net carbs. 1 ounce is 2 tbsp, so you have 6 oz of cream. If these 6 oz have under 100 calories, then 1 oz should have under 16 calories. Let's say the milk has only 20 calories (very low!) in 1 tbsp, so that would make for 7 calories in 1 oz of cream. Under 9 calories left. You have 3 net carbs in 6 oz of cream, with almost none coming from milk, so that is 2 calories in 1 oz of cream coming from carbs. Good. Under 7 calories left. 1 g of fat has 9 calories. 1 g of protein has 4 calories. So the ricotta cheese should have, per oz, something like 0.5 g carbohydrates, 0.6 g fat and 0.4 g protein. That is maximum 1.5 g of fat+carbs+protein (maximum because you said "less than 100 calories") in 30 g (1 oz) of ricotta cheese, which means less than 5%. The rest, at least 95%, must come from moisture and ash. For comparison, in the regular whole milk ricotta cheese (which should have a carb count close to what Julie mentioned), only 72% is moisture+ash!

          But leaving carbs and calories aside... When you start changing the rules, you are no longer following Atkins, but your own low-carb diet. Saying that you do Atkins by eating nuts, ricotta cheese, coconut milk and what else in "induction" sounds to me a little like one of those jokes on Radio Yerevan. I do not say you can't lose weight by eating your way, but it is not Atkins, nor what we advise on this board!

                I'm new here, but this sounds DELICIOUS!! I guess I'll have to wait for a while to try it (induction right now)! But thanks for sharing this recipe -- it's on my list!
