I dont much like the idea of coating my cheese in pork rinds. So I had some leftover oil from cooking up porkchops. I just re-heated the oil with all the crispies still in it, and tossed in a few pieces of queso fresco (cut into cubes and seasoned with garlic and onion powder), and flip them once when they start to brown on the bottom.
the result? crispy on the ouside, melty on the inside fried cheese bites!
I can only allow myself a couple of these ever few days because cheese slows me down, but they're great as leftovers when they're cold too. ok that last part might just be me, but still yum!
